Pancakes

Original from coolinarika with halved quantities, doubled baking powder, no vanilla sugar and simpler instructions.

I like eating them with peanut butter and honey. You get at least 8 pancakes out of this which for me is enough for 4 days or for sharing with friends :).

Ingredients

  • 2 eggs
  • 12 g of sugar (tablespoon)
  • 300 g of all-purpose flour
  • 310 ml of milk
  • 60 ml of oil
  • 12 g of baking powder (one of those little bags)

Instructions

  1. Mix the wet ingredients
  2. Mix the dry ingredients
  3. Add the wet ingredients to the dry ingredients
  4. Bake on lower heat than usual to let them rise nicely :)

Seitan

For this one i just tried a bunch of things and this works the best so far.

Adjust spices to your liking :).

Ingredients

  • 50 g vital wheat gluten
  • 10 g nutritional yeast
  • 1/2 a teaspoon of vegeta
  • 3/4 a teaspoon of smoked paprika
  • 100 ml of water
  • 20 ml of cooking oil

Instructions

  1. Mix dry ingredients
  2. Add water and mix
  3. Prepare a baking container by putting in the oil and coating it
  4. Separate out the mixture into bite-sized balls
  5. Put the bite-sized balls in the baking container and roll them a bit in the oil
  6. Bake for 20 minutes on 200 degrees celsius

Brownies

Stolen from coolinarika with 50% more ingredients.

Ingredients

  • 6 eggs
  • 210 g of sugar
  • 225 g of all purpose flour
  • 150 g of butter
  • 600 g of cooking chocolate

Instructions

  1. Mix eggs and sugar
  2. Add flour to eggs and sugar and mix
  3. Melt the butter and then chocolate on low heat
  4. Wait for the butter and chocolate to cool down a bit
  5. Mix the butter and chocolate with the rest of the ingredients
  6. Pour the mixture in a casserole with baking paper and spread it evenly
  7. Bake for 20 minutes at 180 degrees celsius

Pita bread

For this one I just googled around a bit and found a mix that works for me thats very simple, easy and quick. :)

Ingredients

  • 100 g of flour
  • 1/4 teaspoon of sugar
  • 1/4 teaspoon of salt
  • 1/4 baking powder bag
  • 60 g water

Instructions

  1. Mix ingredients
  2. Heat up non-stick pan
  3. Bake both sides for a couple of minutes each

Mom's cake

This is a cake recipe from my mom :). She made this a lot of times when i was a kid and still does. It's very easy, delicious and can be customized a lot.

You can add in any fruit of your liking (canned or fresh), top it off with some walnuts, add cinnamon, etc. A good starting amount of fruit is just enough so you cover 50% of the area of your mixture with it. My favorite is a can of peaches. This is just the base "at least do this" recipe.

For measuring ingredients, please use a cup of solid yogurt. You need the solid yogurt as one of the ingredients anyway.

Ingredients

  • 2 eggs
  • 1 yogurt cup of sugar
  • 1 8 g packet of vanilla sugar (optional)
  • 1/2 a yogurt cup of oil
  • 1 yogurt cup of semolina flour (this is called griz in Croatia)
  • 1 yogurt cup of... yogurt
  • 1 + 1/2 yogurt cup of flour
  • 1 12 g packet of baking powder
  • Fruit of your liking

Instructions

  1. Heat up oven at 180 degrees celsius
  2. Mix ingredients
  3. Pour mixture into a well oiled pan or on baking paper
  4. Add fruit pieces of your liking and push them in the mixture
  5. Bake for ~25 minutes (use toothpick to check - it should be golden brown on top and almost dry in the middle)

Egg fry rice

This is a cursed Croatian version of egg fry rice that is intended to be easily made in Croatia with the ingredients available here. please don't show to uncle Roger.

Ingredients

  1. 1/2 cup of parboiled rice
  2. 1 cup of water
  3. 3 eggs
  4. Splash of soy sauce if you can get it - otherwise just add a bit more Vegeta
  5. 1/2 of a large onion
  6. 1 small carrot
  7. 1 teaspoon of ground chilli (this is a mild version for Croatians - add more or something spicier to your liking)
  8. 2-3 teaspoons of Vegeta (depends on how salty you want it - remember to taste at the end and adjust if needed)
  9. 4 garlic cloves
  10. 2 tablespoons of vegetable oil
  11. A pinch of dry parsley
  12. 1 spring onion green part if you have it

Instructions

  1. Set the parboiled rice and water to cook
  2. Finely cut the vegetables and garlic (for the spring onion you want to cut thin slices of the green part)
  3. Put the eggs in a bowl and whisk them
  4. Wait for the rice to fully absorb the water
  5. Heat up a non-stick pan on high heat
  6. Put the oil, vegetables except spring onion, garlic, and ground chilli to a pan
  7. Fry until the onion is see-through
  8. Add the eggs and mix until the egg is almost fully solid
  9. Add the rice and Vegeta
  10. Let the egg get some color for a bit
  11. Mix everything thoroughly
  12. Taste test and add a splash of soy and more Vegeta to your liking
  13. Wait ~20 seconds so the egg and rice get a bit charred
  14. Repeat steps 11-13 2-3 times
  15. Turn off the heat and add the dry parsley
  16. Mix again
  17. Serve on a plate and top it off with the spring onion
